Chocolate Apricot Fudge | The Easy Recipe

I’ve been making this chocolate treat for at least 15 years. A friend of a friend made and brought it along to a bbq and she kindly told me the recipe. I couldn’t believe how easy it was. It’s just four ingredients and a few minutes to make.

What You Need

  • 1 Packet 375gm Dark Chocolate Melts (or these are Menz dark chocolate bits from the Foodland bulk buy area)
  • 1 Can Condensed Milk 395gm
  • 1 Tablespoon Margarine or Butter
  • Approx. 100gm Diced Dried Apricots (1/2 a packet) or more if you like

What to Do

Melt the chocolate in the microwave using medium heat for about 1 minute. I use a 2 litre jug. Add the margarine or butter. Then do short bursts of no more than 10 to 20 seconds at a time until the chocolate is melted. {Tip: Be careful not to overheat or it may sieze. Usually when most of it is melted, if you stir it a bit, the rest will melt without any more heating}.  You can of course melt the chocolate in a bowl over a saucepan of hot water if you prefer.

Add the condensed milk and heat again for bursts of 10 to 20 seconds to thin the mixture enough to stir it all together until you get a glossy ganache consistency below. Stir through the diced apricots and pour into a square or rectangle cake tin, lined with non-stick baking paper. Set in the fridge for at least an hour.

Cut into squares using a warm sharp knife. It will keep for several days in the fridge in an air-tight container.

You could substitute the apricot with other fruit or nuts.

Over the years, I’ve made it for bbqs, parties, morning tea and also packaged in cello bags for fundraising or cake stalls. It’s the easiest chocolate treat to make, but tastes so good people will think you’ve gone to a lot more effort!
