Easy Christmas Wreath Pavlova Recipe.

A family favourite Aussie Christmas dessert to make for family and friends this festive season.

Having made countless pavlovas over the years, this festive berry delight is one of the most popular treats to enjoy during the summer.  The decorating options are endless – fresh berries, lollies, chocolate, gingerbread, crushed candy canes, tiny teddies and even brightly coloured macarons! Choose your favourite in-season fruits such as mango and passionfruit for a sunny colour palette, or stick to traditional reds and green.

Pavlovas are very simple to make but they can be temperamental.  Because they need to cool slowly I generally cook them in the evening and leave the pavlova to go cold in the oven overnight. 

INGREDIENTS:

  • 4 egg whites (at room temperature)
  • pinch of salt
  • 250g castor sugar*
  • 2 teaspoons cornflour
  • 1 teaspoon white-wine vinegar
  • few drops of pure vanilla

*I like to use raw castor sugar for both the flavour and colour

STEPS:

Preheat the oven to 180°C. Line a baking tray with baking paper and draw a 20cm circle on the paper using a bowl or plate for accuracy, then place a smaller bowl in the centre and draw another circle to form a wreath.

Using an electric mixer beat the egg whites and salt until satiny peaks start to form. Then beat in the sugar, a quarter at a time, until meringue is stiff and shiny.

Next, sprinkle over the cornflour, vinegar and vanilla and using a spatula lightly fold into the mixture. Then start placing the mixture onto the paper-lined baking tray keeping inside the lines.  It doesn’t need to be perfectly smooth, but gently flatten the top and smooth the sides.

Place into the oven and immediately reduce heat down to 150°C and cook for 30 minutes. Then turn the temperature down again to 120°C and cook for another 45 minutes.

Finally, turn the oven off and leave the pavlova in the oven to cool completely.

DECORATING:

Place your pavlova on a serving platter before decorating.

Whip up a tub of thickened cream with a few drops of vanilla then spoon it over the top of the pavlova.

Next, decorate with your choice of fruit or other toppings – be generous and you can also finish off with a dusting of icing sugar before serving.  Enjoy!
